Lutein

Lutein ist ein in der Natur weitverbreiteter, gelber Carotinoidfarbstoff. Die Bzeichnung  Lutein wird synonym mit Xanthophyll gebraucht. Der Farbstoff ist Begleiter von Chlorophyll und kommt in grünen Planzen, Blüten, Früchten, Bakterien, Eidotter, Getreidekörnern und als Dipalmitat in der Netzhaut des Auges vor.

Mit dem Begiff "Xanthophylle"  wird  (neben den Carotinen) eine zweite Gruppe der Carotinoide bezeichnet. Xanthophylle haben eine große chemische Ähnlichkeit zu den Carotinen, enthalten aber im Gegensazt zu diesen sauerstoffhaltige Gruppen. Xanthophylle sind unterschiedlich gefärbte Naturstoffe (bei Tieren wie auch bei Pflanzen).
