Maltitol

Maltitol, a disaccharide, is a sugar substitute. Maltitol is very easily soluble in water and almost insoluble in ethanol and ether. The substance is produced by the reduction of maltose.

Maltitol is authorised without a quantitative limit (quantum satis) for certain foodstuffs. These include:

energy-reduced or sugar-free desserts, ice cream

energy-reduced or sugar-free sweets and chewing gum

sauces, mustard

Food supplements

Maltitol is also used as a carrier for aromas and vitamins and is also used in cosmetics (INCI designation Maltitol) and tobacco products.
