Pectin methylesterase

Plant polypeptides which enzymatically cleave pectin polymers. They are of allergological interest, as various marker allergens, e.g. Sal k 5 of the saltwort (Salsola kali), Ole e 11 a minor allergen of the laminales (e.g. olive) or Bet v 6 a minor allergen of the basales (e.g. birch) belong to this enzyme group.
