The compounds resulting from the esterification of mono- and diglycerides of fatty acids (MDG) with acetylated tartaric acid (E 334) also act as emulsifiers like other glycerol esters of mono- and diglycerides ( E 472a,b, c,d,f). They are authorised in the EU as food additives under the number E 472d. As these ester compounds interact strongly with proteins and especially with wheat gluten (see gluten below), they are of great importance in the production of baked goods.
