Diphosphates are synthesised salts of phosphoric acid (E 338) and are authorised in the EU as food additives. They have different properties and are used in food technology as antioxidants, raising agents, emulsifiers, firming agents, complexing agents, acidity regulators, melting salts and stabilizers.
The following variants are distinguished and used in food technology:
- Disodium diphosphate
- Trisodium diphosphate
- Tetrasodium diphosphate
- Tetrapotassium diphosphate
- Dicalcium diphosphate
- Calcium dihydrogen diphosphate.
